Vegan Microgreen Nachos

Confession: I'm not vegan. 

My favorite foods are all plant based, I haven't eaten meat in over 17 years, and cheese kinda skeeves me these days. But earlier this week I brought over some microgreens to share with some friends who turned around and whipped up some microgreen nachos for sharing, loaded with real dairy cheese. Ordinarily, I would have passed on these, but, microgreens, you know.. I helped devour three giant plates of them, and I've had nachos on my mind ever since. 

This morning the nacho craving hit me hard. Since I still have some cheese hang ups, so I went with a vegan nacho cheese sauce recipe from Veggie on a Penny. I was super impressed with the outcome, who knew potatoes, carrots, oil and some seasoning could pretty much replicate the texture, flavor, and appearance of dairy nacho cheese! Super tasty and I didn't feel heavy and weighed down like I do after eating dairy. Win!

I loaded my nachos up with leafy greens, green onions, jalepeno, tomato, avocado, tempeh, and last but not least, my Premium Spicy Blend microgreens, a mix of Purple Sango radish, red cabbage, and Crimson Tide mustard micros. Other topping ideas you could get down with: pico de gallo, onions, hot sauce, olives, guacamole, fresh corn, beans, or whatever your favorite vegetable is. Creativity>Authenticity

Putting it all together:

  • 1/2 cup or more of Veggie on a Penny's nacho sauce
  • Tortilla chips, I used a combo of blue and yellow corn
  • 1/2 cup finely chopped leafy greens
  • 1/2 avocado, diced
  • 1 tomato, diced
  • 1/3 jalapeno, finely diced
  • 2 green onions, finely sliced
  • half a brick of tempeh, cubed, hit with a few dashes of Bragg's liquid aminos
  • 2-3 oz of your favorite microgreens. I used our Premium Spicy Blend.

Assembly:

Get all your ingredients ready, then layer, layer, layer. No one likes those dry chips at the bottom of the plate after all the toppings are gone. Put down a handful of chips, drizzle your nacho sauce, then pile with heaps of veggies and microgreens. Repeat: chips, sauce, veg, micros, until you're looking at a huge plate of nachos. Serves 2-3 as an appetizer, or in my case, one really hungry microgreen addict. Bon appetit!
