Simple, fresh, colorful, delicious. Veggies piled high on a piece of hummus toast. Created by Carrie H. for our Open Farm event today. This was my favorite dish we served.
Start with your favorite bread or cracker, smother on a thick layer of hummus. Top with tomato, red onion, cucumber, shredded carrot, and microgreens. This is our confetti blend here. You can never have enough color on your plate, right?
We used TJs seed and grain crispbread as a base, it held up well to the weight of the toppings and didn't become soggy under the hummus. I tried three different varieties of hummus, and I think plain hummus was superior for this snack.
